Chocolate means many things to many people. The Aztecs used it as a form of currency. Spanish Monks believed chocolate promoted good health when they drank it, and the French viewed chocolate as a sign of wealth and good taste. For the Swiss, chocolate is their national dish.
Nobody knows when chocolate was first invented, although chocolate was originally made from cacao beans which grew wild in Mexico. The local Indians there used cacao to make a spicy drink flavored with chili and pepper, which they called “chocolatl”, meaning “warm drink”.
The Spanish made modifications to this drink— sugar and vanilla replaced the chili and subsequently, chocolate became all the rage among the fashionable French. Chocolate houses that served this new chocolate drink were common in Paris, London and Venice by the 1700s. Bakers started experimenting with chocolate in cakes and rolls soon after.
Modern chocolate as we know it melts in your mouth. Of major significance, was the process developed by Henri Nestle, who wanted to make his chocolate extra rich by adding milk to it – hence the creamy milk chocolate that we eat today.
One thing will stay constant – even at a production rate of 600,000 tons a year, people will never be able to get enough chocolate!
